Lasagna

Today this little blog is featured on The Mother Bear Diaries. Please check it out. I am incredibly honored to among the wonderful girls featured!  I am loving adding recipes to my blog so from now on I'm going to try to put one up every week! So here is my lasagna! 

Ingredients:

1 package lasagna noodles
Two jars of your favorite spaghetti sauce (I like prego)
One jar of Alfredo sauce
1 can mushrooms
1 box of frozen spinach
1 tub of ricotta cheese
2-3 cloves of garlic
1 bag of Parmesan cheese
1 bag of Italian blend cheese
1 pound of turkey meat or beef
salt and pepper
oregano
Italian Seasoning
Basil


Steps:

In a large pan begin browning meat. Add basil, Italian seasoning and salt and pepper. While meat is browning in a large pot pour the jars of spaghetti sauce, mushrooms and a little Basil. Also bring a large pot of water to boil the noodles. Follow instructions on the package. Once you have this started put the spinach in the microwave to begin thawing.

Once meat is down browning add the chopped garlic. Cook until garlic is done then add meat to sauce pot.

When spinach is thawed make sure to squeeze out all extra juice then combine with the ricotta cheese.

When noodles are done drain them and set aside.


In a large casserole dish begin layering the lasagna. On  the bottom of the dish put down a layer of the red sauce, then a layer of noodles, then ricotta, then Alfredo sauce, the Italian cheese blend and finally red sauce and repeat!  When you are done with all layers put a blend of Italian cheese and Parmesan on top.

Cook in oven on 350 for 30-45 minutes or until golden brown and bubbling!

I usually serve with a small salad and garlic bread!  Enjoy!

Wednesday Randoms

  • Yesterday Levi therapy. We were excited to show the PT his new rolling skills!
  • I have set a new goal to loose 15 pounds by May 1. The babies birthday is May 4 so Im hoping to have it done by their party! I think 5 pounds a month is doable!
  • I have been stopping too much lately! Emma has so many clothes. I am on a spending hiatus until February!
  • I am loving the new show Revenge! Have you watched it? It is so good!
  • I am loving my new blog design done by Tiffany at TKC Designs. You can find her here
  • I am so ready for spring. I really just want to skip winter and fast forward to April!
  • My sister and I are planning a birthday party for my mom! Im so excited about this!

My favorite Chili Recipe

This is the easiest chili. I think it is at least. Sometimes I will make two pots, one with meat for the hubby and one without for me!  Here is the recipe. It was originally my moms recipe but I updated it to my taste.

Ingredients:

3 cans tomato soup
1 can crushed tomatoes
3 cans Busch's chili beans
1 green pepper
1 medium onion
1 beer (can be left out)
1 package of ground turkey meat
4 tbs chili powder
1 package of chili seasoning
1 tsp oregano
Salt and Pepper to taste
1-3 cloves of garlic chopped


Start by browning the turkey meat. I add salt and pepper as well as a little chili powder to the meat. Once meat is brown I put it in the large chili pot. Then I brown diced onion, garlic and  green pepper. When done I add to the meat.

To this mixture I add the rest of the ingredients as well as 2 cans of water. I use the empty tomato soup cans. Basically it's just brown and dump! 

I bring all to a boil and them simmer  until dinner. I try to cook it for at least 3 hours but I like longer.  I check on it and stir about every half hour. Topping we use cheese, Frito's, onion, and corn bread!
