Lasagna Roll Ups

I have seen this on pinterest and wanted to give it a try. It was actually really easy and quite tasty! Hopefully you will be able to do this yourself!

Ingredients:

  • Lasagna noodles
  • 1-2 jars of marinara sauce depending on how saucey you like it
  • 1 jar Alfredo sauce
  • 1 tub of ricotta cheese
  • 1 frozen box of spinach
  • 1 bag of mozzarella cheese
  • 1 bag of shredded Parmesan cheese
  • 1 lb of turkey or beef (optional)

Steps:

  1. Begin by boiling 10-12 lasagna noodles depending on how many rolls you think you will need. We had salad and bread with our lasagna rolls so each person only ate one.
  2. Thaw and drain the spinach. Once drained add the spinach with the ricotta cheese and add Italian spices.  This would be a good time to brown the meat if you choose to use meat.
  3. Once noodles are boiled drain and set aside. Lay one noodle out on a cutting board.


4. Begin layering the marinara sauce, Alfredo sauce, ricotta mixture, and mozzarella and meat if you choose to use any.

5. Once you have layered all of your ingredients roll up the lasagna noodle and place it in the pan. Before placing the rolls in the dish put down a thin layer of sauce to prevent them from sticking.


6. Repeat this step until all of your roll ups are done.  Cover with a thing layer of sauce and the mozzarella and Parmesan cheese.




 
7. Bake in the oven at 350 for 25 minutes or until cheese is bubbly and golden brown! 
8. Enjoy!

Surpirse It's Twins!

This week for our "For MOMs by MOMs" link up we are sharing our story of how we found out it was twins and how we told people. Please visit our blog here and link up! 

My story is pretty boring but I want to share it anyway. I was about 6 weeks pregnant and on Thanksgiving break from school.  Monday of the break I went to meet a friend for lunch. when I got home it started.  I was laying down for about five minutes when I started vomiting exorcist style.  The puking continued around the clock for the next couple of days.  I was scared. I had heard of morning sickness but not constant sickness! By Wednesday morning I had hardly kept anything down and I was getting concerned. I called my ob and she recommended for me to go to the ER to get some fluids.  I called Clayton who out was out playing golf and had him come home to go with me to the hospital. We got to the hospital without me puking everywhere and got some fluids.

The doctor on call wanted to do an ultra sound just to make sure everything was ok.  We went to the ultra sound and the technician started counting. She got to six and Clayton looked like he was going to pass out. He asked her if there were six babies and she said no that I had cysts on my ovaries.  But that there were two of course. OF COURSE! What you talking about Willis?? I heard Clayton say two? Twins? I couldn't really talk. Somewhere deep in I expected twins. My dad is a twin and my mom has twin uncles. That plus IUI I knew our chance was pretty high.

We were both in shock and wanted to call people but we decided to wait until we left the hospital. We there were for about another hour or so while they got me a prescription for the wonder drug that is Zofran and made sure I could keep some food and water down. 

On the way home from the hospital I called my mom to tell her that everything was fine. I wanted to hold in our secret until Thanksgiving since it was only a day away but I couldn't do it! I told my mom that we had had an ultrasound and that everything looked good. I then told her that we saw the "heartbeatS". She went on and said oh that's good. Then it sunk in and she was so happy! She laughed and giggled and we were thrilled at the thought of two babies! After that we called Clayton's parents and my sister.  I was pretty exhausted so we decided to wait until the next day to tell the rest of the family!  That was the best Thanksgiving ever!  And I am so thankful for my babies!

The Best Guacamole

I haven't posted a recipe in a while but I'm trying to get back in the blogging swing of things.  So here you go here is my absolute favorite guacamole recipe. Here is what you will need!

  • 3-4 large avocados
  • half a red onion chopped
  • jalapeno seeded and chopped
  • small tomato chopped
  • 2-3 garlic cloves chopped
  • juice of one lime
  • salt and pepper

So simple. Begin by scooping out the avocados into a bowl.  Then add the rest of the ingredients. Once it is well blended taste. You may need to add more of one thing to make it taste the way you like. 

A twist on the recipe is to add mexi-corn and black beans.  I hope you enjoy both of these versions of guacamole!  I serve both of them with tortilla chips. Enjoy!

For MOMs by MOMs- starting solids

Hello all! Today I am writing to tell you about how I started solids with my twins! The fabulous girls that I host this link up with are also writing about this topic!  Please link up on our new blog and share your story. 

When my twins were about four and a half months old we began with solids because of the horrible reflux both of my twins were having. I wanted to start off slow.  We started off doing rice cereal once a day.  At first it was just something for them to play with. It was hard to get them to realize that the spoon was for eating and not for playing. It took about two weeks.  After about two and a half weeks we moved on to oatmeal.  They seemed to like this much better. I mean have you ever tried the rice cereal. Ugh that stuff is gross! 



After doing oatmeal for about two weeks we got the go ahead from our pediatrician to start with veggies. Our pediatrician recommended started with yellow veggies.  I can't remember exactly but I believe we started with squash.  They liked this better but believe me the faces they made were quite funny! I mixed a couple of spoonfuls of squash with oatmeal. We did this for three days to make sure there were no allergies.  After the first three days we moved on to another yellow veggie. After doing each yellow veggie for three days we moved onto orange and then green veggies.

Finally after finishing all veggies we moved onto fruit! This went over much better with the kids. Of course they liked fruits better because they are sweeter. Once we introduced all fruits and veggies we moved to two meals a day.  I would do a breakfast meal and dinner meal. Breakfast consisted of a fruit and oatmeal and dinner consisted of a veggie and rice cereal. Eventually as they got the hang of it we introduced lunch.

Then the real fun started when around 9 months we started finger foods.  I started off slow with puffs and cheerios.  Next we tried peas and other small foods like cut up bananas and green beans.  Once we got farther into finger foods both of my kids started refusing baby food. So eventually around 11 months we were doing all table food. They basically eat what we eat except cut up tiny. 


Early on when we started baby food I began putting a sippy cup on their tray. Eventually they got the hang of it began drinking on their own.

Catching Up

Hey guys!  I am alive and here!  Last week while working on a new post I spilled a huge glass of water on my computer. Ugh. Luckily after a *small* panic attack over lost pictures and the purchasing of an external hard drive,  we finally got it working again. So here I am catching you up on what we have been doing lately.
